Mmm-mmm-mmm-mmm-mmm! I’m still happy about last night’s dinner. Ok so I’m easy to please, sue me. Usually our weekly steak meal consists of steak (duh), rice and a vegetable (usually peas, sometimes corn). Well last night I decided to roast potatoes instead of peas or corn. I took three medium white potatoes, cut them in pretty thick slices and then quartered the slices. Then I dumped them in a baking dish, sprinkled salt and basil on, poured in a little olive oil and then baked them for about 45 minutes. Man! They were so good. I have determined that my four, all-time favorite foods are (in no particular order): potatoes, tomatoes, pasta and rice. I could eat these four items for the rest of my life and be perfectly content. Throw in some garlic, basil, thyme, cayenne pepper, black pepper, onions, and splash of balsamic vinaigrette every now and again and you have a very happy Michael.
